1 (soon to be) Famous Cookie Recipe

Jam Crumb Cookies
  • 1 1/2 cups all-purpose flour
  • 3/4 cup brown sugar, firmly packed
  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter, melted and cooled
  • 1 cup of strawberry, peach, or blueberry jam or canned pie filling.
    Apple or cherry pie filling works well.

Preheat oven to 350 degrees.

Lightly spray an 8-inch tart pan with nonstick cooking spray.

In a medium bowl combine flour, brown sugar, granulated sugar, cinnamon, cardamom and salt. Stir in butter until just crumbly. Add just over half of the crumble mixture to the tart pan and pat down. Dollop with the fruit of your choice using most of it.

Sprinkle with most of the remaining crumble, allowing some fruit to peek through. Dollop with any remaining fruit.

Bake 30 minutes, until the fruit is bubbly and the crumb is lightly browned. Remove from oven, let stand for 10 minutes and cut into 8 wedges. Let cool in the pan, then remove and serve.
