
Makes one 8- or 9-inch single layer cake. Oven at 350 degrees. Use a spring form pan, greased or a cake pan lined with parchment paper.
- ¾ C sugar
- One stick of room temperature butter
- 2 eggs
- 1 t vanilla
- 1 C flour
- 1 t baking powder
- Pinch of salt
In a mixer with a paddle cream ¾ C sugar with one stick of room temperature butter until fluffy. Next, add 2 eggs and 1 t vanilla. Combine dry ingredients: 1 C flour, 1 t baking powder, pinch of salt. Add to batter. Mix until combined.
Pour cake batter into prepared pan.
Halve and pit 6 Italian plums and place skin side up on top of batter. Sprinkle top with some cinnamon sugar or turbinado sugar.
Bake 35 to 45 minutes depending on pan size. Cool on rack.
Serve with a dollop of whipped cream or vanilla ice cream!
