Zuppa Toscana

Bowl Of Zuppa Toscana Soup
  • 4 slices of thick cut bacon
  • 1 lb. hot Italian sausage
  • 1 box (4 cups) chicken broth
  • 4 potatoes diced
  • 3 cloves chopped garlic
  • 1 can cannellini beans
  • 2 Cup kale or spinach
  • 1 onion diced
  • 2 diced carrots
  • 1 Cup heavy cream, or you can use half & half
  • salt & pepper to taste

Brown bacon and sausage in a soup pot, remove with slotted spoon and save some of the fat. Sauté the onion, carrot and garlic. Add the potatoes and broth, and cook until the potatoes are soft. Add the cooked meats, beans, greens, and seasonings. Last, add the cream. Very satisfying!
